Simple Wheat Berry Salad
Simple Wheat Berry Salad Wheat berries are a wonderful, flavorful, versatile whole grain, very healthful and full of fiber. Try this simple salad as an introduction to them and you'll be hooked! *all amounts approximate* Bring 3 cups water to a boil and add 1 cup sorted and rinsed Wheat Berries Simmer for 1 hour or until tender and chewy, drain and let cool Chop: 4 or 5 scallions (green parts too!) 1 medium zucchini 1/2 red pepper 1 medium tomato Mix vegetables with wheat berries and 1 tbsp olive oil and 2 tbsp balsamic vinegar, salt & pepper to taste. Refrigerate for 1 hour. Great for lunch with some Triscuits, or as a side dish for dinner! (wheat berries can be found at health food stores or at most markets with a bulk foods section) |
